My favorite Chicken Casserole

I’ve had a lot of chicken casseroles, but this one is my absolute favorite. Make a pot of rice (or use leftovers) – add cooked chicken (if you’re in a hurry, canned chicken works great too), Rotel tomatoes and Velveeta cheese. The amount depends on how much you want to make- and how much rice you have. I always say the more cheese the better, so don’t skimp on that. If you want a spicier dish, use HOT Rotel. I chunk up the cheese and stir a few times while baking to thoroughly mix the cheese and rice together. This is super simple- and everyone loves it. Serve with warm tortillas- this rice mixture makes a great burrito!
